Chewy Coconut Cookies
In lieu of posting new cookies while at the same time keeping this blog up-to-date: chewy* coconut cookies! I’ve noticed that people have strong opinions about coconut. Some love it, others will try and avoid it. I, for one, love it.. and it seems to have a good reputation in the vegan community (for some reason). In my experience, however, everyone I’ve given these to love them. Or they love the idea of free cookies regardless.
Coconut milk, flakes, and extract give these cookies an incredibly defined coconut flavor, which seems to sit well with even the fiercest of coconut haters.
*The current baking time/temperature to yield the right texture is under speculation, but I want to say thanks to all the testers- we couldn’t do it without you.
